What's cooking Wednesday : Sweet and Spicy Chicken Bacon Wraps
As most of you know, I love Pinterest! I don't spend a lot of time pinning, (ain't nobody got time for that!) but I do love trying the recipes I do pin! This recipe come from the 101 Cooking For Two blog. Last week we ate extremely healthy all week long, so come Friday I was ready for something not to super healthy! This recipe was perfect!
Sweet and Spicy Chicken and Bacon Wraps
about 1 1/4 pounds skinless boneless chicken breasts cut into 1 inch cubes
1 1/2 pounds bacon
2/3 cup dark brown sugar (I used regular brown sugar)
2 T chili powder
1/2 t cumin
Preheat oven to 350 convection. In a large mixing bowl, combine 2/3 cup dark brown sugar, 2 T chili powder and 1/2 t cumin. Mix well.
Clean and trim about 1 1/4 pounds of skinless boneless chicken breast. Cut into approx. 1 inch cubes.
If using thick bacon, thin out with the back edge of a chef knife. Cut the bacon in half, roll around the chicken cubes and secure with a tooth pick. This is the point to cover and refrigerate for better timing.
Prep baking sheet with aluminum foil a rack and spray with PAM.
Roll the pieces in the brown sugar mixture. Be sure to pack some in the ends. Place on the rack.
Bake until golden brown. About 35 minutes for me. Cover with foil on heavy dish to keep warm until served.
These were the perfect size to just pop in your mouth! They were pretty irresistible, so we made them again on Sunday for the big game! Can't wait to see what you all think!
My name is Chelsea, however nearly 11 years ago my Niece gave me the name Jack and it has stuck ever since! I am an Army Wife happily married to Captain Hunk and a Mother of my sweet little Troop! I am sure you will hear a lot about them! I LOVE photography but more importantly at this time, I love cooking and cleaning and all things domestic! I decided it was time to share my hints and tips and maybe a few recipes out of my hand written, ever so popular secret recipes book! Thanks for joining me and enjoy!
